Frozen vegetables make useful, affordable dinner ingredients without requiring advance chopping or thawing. Here are six independent two-serving recipes, each designed for roughly 20–30 minutes. They cover chicken, eggs, beans, tofu, fish and chickpeas rather than repeating one lentil-based budget skillet. Frozen produce is cooked directly from frozen unless the package says otherwise.
Six complete frozen-vegetable dinners
All amounts below are for two portions, not one.
1. Chicken, broccoli and rice skillet (20–25 minutes)
Ingredients for two: 240 g chicken breast; 300 g frozen broccoli; 130 g dry rice; 80 g onion; 10 g olive oil.
Method: Cook rice according to its packet. Slice chicken into thin strips. Fry onion and chicken in oil for 6–8 minutes, turning until the center reaches 74°C. Add frozen broccoli and 60 ml water, cover and cook 7–9 minutes until steaming throughout. Mix with cooked rice, divide into two.
2. Egg, spinach and potato pan (25–30 minutes)
Ingredients for two: 450 g potatoes; 250 g frozen spinach; 3 eggs; 100 g onion; 12 g olive oil.
Method: Dice potatoes into 1.5-cm cubes; simmer in water for 10 minutes and drain. Soften onion in oil for 3 minutes. Add potatoes and fry 5 minutes, then add frozen spinach and cook until fully hot. Crack in eggs, cover and cook until whites and yolks are firm. Split evenly.
3. White-bean vegetable tomato pasta (20–25 minutes)
Ingredients for two: 150 g dry wholewheat pasta; 240 g drained canned white beans; 250 g frozen mixed vegetables; 300 g chopped tomatoes; 10 g olive oil.
Method: Boil pasta until tender. Heat oil and frozen mixed vegetables in a saucepan for 5 minutes, stir in tomatoes and drained beans and simmer 8 minutes until hot throughout. Toss with drained pasta and divide.
4. Tofu, peas and noodle stir-fry (20–25 minutes)
Ingredients for two: 240 g firm tofu; 250 g frozen peas; 140 g dry noodles; 150 g carrot; 10 g rapeseed oil.
Method: Cook noodles as directed. Pat tofu dry, cube, and fry in oil for 6 minutes. Add thin carrot strips and frozen peas plus a splash of water; stir-fry 6–8 minutes until peas are hot. Add drained noodles and toss for 2 minutes.
5. Salmon, green-bean and couscous bowls (20–25 minutes)
Ingredients for two: 240 g boneless salmon fillet; 300 g frozen green beans; 130 g dry couscous; 25 g lemon juice; 10 g olive oil.
Method: Pour 155 ml boiling water over couscous, cover 5 minutes and fluff. Pan-cook salmon in half the oil for about 4–5 minutes per side depending on thickness until opaque and 63°C at the thickest point. Cook frozen green beans in boiling water until tender and steaming. Add lemon and remaining oil; split into bowls.
6. Chickpea cauliflower curry and rice (25–30 minutes)
Ingredients for two: 240 g drained canned chickpeas; 300 g frozen cauliflower; 120 g dry rice; 300 g chopped tomatoes; 10 g olive oil; 6 g curry powder.
Method: Cook rice. Heat oil and curry powder for 30 seconds, add tomatoes, frozen cauliflower and 100 ml water, then cover and simmer 12–15 minutes. Stir in drained chickpeas for 5 more minutes until everything is hot and cauliflower tender. Spoon over rice and divide.
Indicative nutrition and used-ingredient costs per serving
These are rounded planning estimates per one portion, not tested nutrient analyses or current shelf prices. The six sets of ingredients each make two servings. Grain weights are dry, beans and chickpeas are drained, and listed cooking oil is included. Frozen vegetables are weighed frozen. Compare the product labels and local receipts before using precise claims.

Shopping choices and substitutions
Choose plain frozen vegetables without added sauces to control salt and cooking fat; compare €/kg and usable weights. Canned beans are drained, dry grains are weighed before cooking, and the grocery checkout total will exceed the price of the amounts used if you buy whole packs. Chicken can be swapped for extra-firm tofu, and salmon for drained canned fish, but nutritional estimates will change.
Food safety and storage
Cook frozen vegetables through according to their packaging; do not treat every frozen product as ready to eat. Cook chicken to 74°C (165°F) and fish to 63°C (145°F); eggs should be fully set. Refrigerate perishable food promptly, within two hours, in shallow containers. USDA guidance recommends using most cooked leftovers within 3–4 days and reheating leftovers to 74°C. For cooked rice, cool rapidly and follow stricter local rice-storage guidance; freeze portions promptly if needed. See USDA leftovers and food safety.
How these dinners differ from other Mealisa collections
This collection focuses on six distinct 20–30-minute dinners where frozen vegetables are central to the meal. It is different from a five-dinner lentil-and-frozen-vegetable budget plan or a broad general quick-dinner roundup. For further planning, see balanced meal guide and whole-grain guide.
